This was one of the few full size images I could find, most seem to be downsampled.

I'm attaching two superresolution images of Iapetus I did by stacking raw images and then sharpening the resulting image. Unfortunately the bright areas are saturated due to the automatic contrast stretch applied to the original JPG images at the Cassini website. However, some interesting details are visible in the dark areas.

Very likely. Just take a look at some other medium sized icemoons. They all have canyons.
